Ian Millar, Distillery Manager, wanted to experiment with The Balvenie's profile, using lessons learned on a trip to Islay ordering a batch of Speyside peat for the distillery. One week a year, The Balvenie distils one batch of peated malt. The result is a whiskey with notes of honey, vanilla and citrus, with an added layer of delicate smokiness.
