Hook Head Lighthouse stands 10 miles from the distillery on the south coast of Ireland, adamant against the brunt of the Atlantic - so close that Oliver Cromwell vowed in the 17th century to take Waterford "by hook or by crook". In his shade, Martin Foley grows barley on clay-loam soils composed of limestone and belonging to the Elton series. This extremely maritime terroir is exposed to all saline storms, sea fog and sea breezes.
Nase Nose |
Earthy maltiness and notes of fresh earth combine with citrus zest, bread crust, spiciness of clove and white pepper. Caramel, milk chocolate and salted popcorn give way to notes of hay and green oak leaves. |
Gaumen Palate |
Intensely spicy with cloves and white pepper, plus salted caramel, liquorice and ginger biscuits as well as lemon zest and chili chocolate. |
Abgang Finish |
Dry but with a lingering oiliness that lingers on the spiciness for a long time. |
