ORGANIC: GAIA 1.1 is the first Irish organic whiskey to be certified by the Organic Trust and has undergone rigorous production processes and audits. It marks the beginning of Waterford's Arcadian Series - an unconventional line of organic, biodynamic and historic distillates. This whiskey is distilled from organic Irish barley grown by Paddy Tobin, Alan Jackson, Pat and Denis Booth, Jason Stanley, Trevor Harris and John Mallick.
A century ago, organically grown malting barley would have been ubiquitous in Ireland, but today it is truly rare.
