DESCRIPTION

Cedar Ridge ist eine echte "Grain-to-Glass"-Destillerie aus Iowa; sie bauen ihren eigenen #2 Yellow Hard Dent Mais an und beziehen Roggen, Weizen und Gerste von anderswo. Eine 3-4-tägige Gärung findet statt, bevor der Brennwert in die vier CARL Pot Stills (33, 100, 200 und 800 Gallonen) gelangt. Eine doppelte Destillation ergibt ein Destillat mit 148 proof (74% ABV).

Die Fässer reifen in einem Gewächshaus ohne Klimakontrolle, was sich in der Welt der amerikanischen Whiskey-Produktion schnell als Best Practice herausstellt. Seit 2010 verwendet Cedar Ridge ausschließlich 53-Gallonen-Fässer mit einem #3 Char von Independent Stave. Mit Ausnahme dieser 5 Jahre alten Abfüllung liegen die meisten Abfüllungen im Bereich von 3-4 Jahren.
