Mehr als 3.600 Unterstützer machten das Projekt GlenWyvis Distillery möglich. Die 2015 in den schottischen Highlands nahe Inverness gegründete Whiskybrennerei ist vollständig in Gemeinschaftsbesitz. Eine rekordverdächtige Crowdfunding-Kampagne finanzierte das Projekt im Wert von 3,8 Millionen Pfund und ließ nach 90 Jahren die Brennereitradition der Stadt Dingwall wieder aufleben.

Eingebettet zwischen den Ausläufern des Ben Wyvis bringt GlenWyvis erneuerbare Energien (die Brennerei ist komplett unabhängig vom Stromnetz) mit lokaler Gerste, langer Fermentation und traditionellen Kupferbrennblasen zusammen. So entsteht ein robuster Single Malt, duftend und fruchtig. Ende 2021 veröffentlichte die kleine Brennerei ihren ersten Whisky. Jetzt ist der GlenWyvis Batch 2 / 2018 Vintage verfügbar.

Für ihren Highland Single Malt Scotch Whisky verwendet GlenWyvis ausschließlich einheimische Concerto-Gerste. Ca. 96 Stunden fermentiert die regionale Maische, bevor sie in der gedrungenen 2.500-Liter-Wash-Still und der 1.700-Liter-Spirit-Still destilliert wird.

Ein kompromissloser Heart Cut wurde für das 2022 Release in 23 Fässer abgefüllt: First Fill Tennessee Whiskey Casks verleihen ihm komplexe Süße, Oloroso Hogsheads steuern üppige Fruchtnoten bei und Refill Scotch Whisky Hogsheads unterstreichen den duftenden, würzigen Charakter des New Makes.

    More than 3,600 supporters made the GlenWyvis Distillery project possible. Founded in 2015 in the Scottish Highlands near Inverness, this whisky distillery is entirely community-owned.
