    Thy Whisky is a Danish single estate distillery located on the Gyrup farm in Thy, on the west coast of Denmark. The distillery is unique in that it is fully integrated with the surrounding farm, using only organic grains grown on its own fields. The entire whisky production process—from cultivating the barley to malting, distilling, and bottling—takes place on the estate, making Thy Whisky one of the few distilleries in the world to produce 100% single estate whisky.

    Thy Whisky uses a combination of traditional and modern equipment. The distillery features a custom-made 1,000-liter copper pot still from Müller, which is essential in their unique single distillation process designed to retain maximum flavor from the malted barley. Thy Whisky also incorporates Danish beechwood for smoking some of its malt, adding a distinctive Danish touch to the flavor profile.

    Casks used for maturation include a mix of Oloroso Sherry, Pedro Ximénez (PX), and Bourbon barrels, which contribute to the whisky's complexity. The flavor profile often includes notes of malt, rich fruit, vinous sweetness, and hints of oak spice, with some expressions incorporating a gentle smokiness from the beechwood-smoked malt.

    The distillery’s focus on terroir, sustainability, and craftsmanship has gained it recognition, with some of its whiskies, like the beechwood-smoked "Bøg," even earning the title of Best European Whisky in Jim Murray's Whisky Bible in 2020
